Yvv's Thick & Creamy Carbonara Pasta Recipe 🍝



Main Ingredients
  1. Fusilli x 250g
  2. Water x 1.5 litre
  3. Broccoli
  4. Sausage or Meat of choice

Side Ingredients
  1. Minced Onion x 1 tbsp
  2. Minced Garlic x 2 tbsp
  3. Olive Oil x 5 tbsp (separated into 4 tbsp & 1 tbsp)

Pasta Sauce
  1. Carbonara Sauce x 6 tbsp
  2. Unsalted Butter x 1 tbsp
  3. Milk x 300ml
  4. Shredded Parmesan Cheese x 80g
  5. Egg X 1
  6. Salt x 1/2 tsp
  7. Pepper x 1/2 tsp
  8. Oregano Seasoning x 1/2 tsp (optional)
  9. Chili Flakes (optional)

Prep Time: 15 mins
Cooking Time: 20 mins
Servings: 3 adult portions

Steps
  1. Bring a pot of 1.5 litre water to boil. Add in 1 tbsp of olive oil, 1 tbsp of salt and 250g of fusilli pasta. Boil for 8-10mins depending on the texture of pasta you like. Drain and set aside.
  2. Heat 4 tbsp of olive oil on a non-stick pan over medium heat. Add minced garlic and onion and fry over low fire until crisp.
  3. Add in chopped sausages and stir fry for about 4-5 mins on medium heat. Pour sauce mixture into pan and keep stirring.
  4. When sauce begins to thicken, add in broccoli and stir for 2-3 mins on low heat.
  5. Add in pasta and stir for 1 min. Turn off heat and serve.

Tip: If sauce is too thick for your liking, add some of the pasta water you use to boil fusilli earlier.
