Yvv’s Cranberry Maple Honey Oatmeal Cookies


Came up with this healthier version of cookies cuz we wanted to snack but didn't want to feel so guilty and mainly cuz I wanted to finish off the items đŸŚ had kept in the fridge for far too long. I have thought that I am already terrible at finishing food/drink items before their best before date, so bad that sometimes they start growing mold. But someone is evidently the champion here with Mission wraps sitting in the chiller for 11 months after the expiry date. I am impressed, not.

So, I found that đŸŚ had a box of dried cranberries in the fridge apart from the other ingredients that we have all the time, therefore Cranberry Maple Honey Oatmeal Cookies was born đŸ’“

I only became successful with this cookie on the 2nd attempt as I started from scratch on the ingredients and their measurements. We prefer lesser than the average less-sweet so I tried finding the balance in the sweetness of the cookie with the other ingredients. Since we have raisins and cranberries that are able to lend some sweetness to the bland oats, we totally opt-out sugar.

Below is the list of ingredients you will need. If you are using unsalted butter, you may want to add half a teaspoon of salt into your cookie mixture.

Ingredients
  1. Rolled Oats with Raisins x 1.5 cups
  2. Dehydrated (dried) Cranberries x 1/2 cup
  3. Maple Honey x 1/4 cup
  4. Salted Butter x 1/4 cup
  5. Egg x 1 large
Ingredients (egg not pictured)

Prep Time: 20 mins
Cooking Time: 12 - 15 mins
Portion: 2 dozen (24 pieces)

Steps
  1. Preheat oven to 180 Celcius (350 Fahrenheit).
  2. Combine oats, cranberries, honey, butter and egg into a mixing bowl. Use a whisk or IKEA rubber spatula to mix ingredients well.
  3. Roll mixture into balls and place on baking pan layered with baking sheet.
  4. Use a fork to gently press the mixture down if you want. I left mine in little balls.
  5. Place tray in the preheated oven of 180 Celcius for 12 - 15 mins. The timing will differ slightly due to cookie size and also the type of oven used. 
  6. Remove from oven and let cookies cool for 10 mins before storing in containers.
